A bit hard to find food that is really
typical of Ternate, Indonesia. Due to its geographical location which is closer
to North Sulawesi, Ternate food, of course, heavily influenced - and at the
same time influence - the food is typical of North Sulawesi . However, because
of the cluster of islands Ternate of North Maluku, then surely also typical
food easily found in Ternate Maluku. Almost all the dishes Ternate involving
walnuts , both as a spice grind, or coarsely chopped. One of the typical cuisine of Ternate
is gohu fish .
GOHU FISH
That
it must be complete: gohu fish. You see, if only called gohu, then it means
it is a young papaya salad is also popular in North Sulawesi. The typical of Ternate's Gohu fish are made from the raw tuna. No wonder that many people refer to it
as sashimi Ternate.
Apparently, in the coastal areas of North
Sulawesi - Bitung for example - can also be found a dish like this. His name is
simply reversed: gohu fish. Perhaps that is what makes the freshness of the
dish bears the name gohu which means salad. Generally, in Ternate, gohu fish
made of tuna (yellowfin tuna = Thunnus albacares).
When the tuna was not the season, tuna
(skipjack) can also be used - though the texture is not as smooth as tuna.
Fresh tuna meat (read: raw!) Cut into small pieces, washed, then smeared with
salt and lemon juice cui (a kind of fragrant lemon and yellow-orange inside),
then mixed with coarse chopped balakama leaves (basil).
Onion and cayenne pepper (called rica gufu in
Ternate) coarsely chopped and sauteed with a little coconut oil. Hot coconut
oil with onion and chilli is then poured into chunks of raw tuna. Then
sprinkled with fried peanuts are coarsely ground. Have imagined it like?
ueennaakk hmm .. If you've ever been to Hawaii, you most likely have never met
a dish like this. The difference is, there are not taking cayenne pepper and
fried peanuts.
In Hawaii the basil replaced with wakame
seaweed alias. This dish is famous in Hawaii with onopoke name. I also never
found a dish that is very similar to this fish gohu - minus cayenne - in
General Santos City, southern Philippines. There, a popular dish is called
kinilauw.
Apparently, dishes such as fish Ternate gohu
this has been the hallmark of traditional communities or islands. Kinilauw only
wearing cut tuna cubes, smeared with salt, mixed with rough chopped onion and
tomato, then in coat with salt and lime.
